Throughout Thyme’s evolution, thoughtful and conscious living has been at the forefront of every decision, from the building projects to the sourcing of produce and products.

Green Engineering


From sophisticated ventilation and insulation to heat pumps and bore holes, the engineering throughout the restoration at Thyme has been with the environment and future in mind, securing these magnificent agricultural buildings for years to come.

The spring water swimming pool uses a state-of-the-art filtration system, maintaining a chlorine-free environment.

Produce with Provenance


We champion responsibly sourced, seasonal ingredients with a focus on growing and harvesting from the vegetable garden, herb beds and orchards on the estate. The farm and gardens are carefully managed to maximise abundance from the land whilst protecting and maintaining healthy rich soil.

Throughout Thyme, we use only British-grown cut flowers. We decorate with seasonal blooms throughout the year, alongside well-tended ferns and potted plants.

Like-Minded People


All our suppliers for the restaurants, bars and shops are like-minded in their approach to the environment and adhere to our Rules of Engagement, which are characterised by sustainable standards, transparency, inclusivity & fairness, and product excellence.

Minimal Waste


Thyme is committed to removing single-use plastics: for example, using straw straws in our drinks, plastic-free bathroom essentials and no clingfilm. Thyme has a rigorous composting, reuse & recycle policy in place; all staff is working to achieve 'no-waste kitchens', with plate waste sent for anaerobic digestion to be converted into fertiliser.
