Pull on your wellingtons and take a guided tour of the Thyme estate. Begin in the walled courtyard gardens of the Ox Barn, designed by Chelsea Flower Show gold medalist Bunny Guinness. Continue through to the Orchard, where apples, pears, plums and medlars grow alongside sea buckthorn, sloes, crab apples and rosehips. Walk across the fields to the Kitchen and Cutting Gardens to learn about the flowers, herbs and vegetables grown on the estate. Pause at the Water Meadows, a place of quiet reflection and remarkable biodiversity. These tranquil wetlands are home to a host of extraordinary birds, including swallows, cuckoos, song thrushes, reed warblers, and all four native species of British owl. After the tour, enjoy a seasonal herbal infusion (perhaps blackcurrant leaf, chamomile or water mint) in the Home Kitchen.
