Join us for a walk through the gardens before lunch in the Ox Barn. We’ll take you through the Orchard of apples, pears, and plums, before we cross the fields to the Kitchen and Cutting gardens to see flowers, herbs and seasonal produce, and pause at the Alitex Greenhouse for a refreshing tomato botanical tasting.

Begin in the walled courtyard gardens of the Ox Barn, designed by Chelsea Flower Show gold medallist Bunny Guinness, before continuing through the Orchard, where apples, pears, plums and medlars grow alongside sea buckthorn, crab apples and rosehips.

Dermot Sugrue joins us in the Ox Barn for a special Wine Supper Club, bringing his celebrated wines from Sugrue South Downs and other exceptional vineyard sites.
Eclairs
Spend an afternoon in the Home Kitchen learning the art of the much-loved classic French pastry, the éclair. In one-hour-and-a-half, master perfect choux, rich creme pâtissier and chocolate sauce. After class, enjoy your eclair in the Baa Bar with coffee or a cocktail.

Instinctive Cook
The Instinctive Cook is Thyme's long-standing, flagship cookery class. The class begins with a walk to the kitchen gardens, harvesting whatever is in season and at its best. Cook a main course and a dessert along with a fruit cordial. Recipes are subject to seasonal availability but might include: cherry and rose cordial, chard and ricotta ravioli with crispy sage butter followed by a raspberry meringue roulade.
Pickles & Preserves
Learn to make a seasonal pickle, jam and cordial in this class. Recipes will vary according to the seasons... in summer, a spicy tomato chutney, gooseberry jam and blackcurrant and meadowsweet cordial might be on the menu. Come winter, recipes could include kraut, lemon and vanilla marmalade and rosehip and ginger cordial. Take home your preserves to share with friends and family.

These elements work in harmony to anchor you in the present moment, calm your nervous system and guide you into a state of deep meditative rest.
Rooted in ancient healing traditions, this Sound Ceremony uses soothing sound vibrations to connect with your body on a cellular level. The experience is designed to support brainwave entertainment, shifting you into the theta state - a realm associated with REM sleep, cellular regeneration and profound inner healing.
7:45am: Arrival - please wait in the Baa Bar, and Alana will come to greet you promptly at 8am.
8am - 9am: Sound Ceremony
9am - 9.30am: Time with Alana for any questions

9am - 10am: Non-residents are welcome to join us for a swim at the pool
Please note that the class starts promptly at 8am so we ask that all guests allow time to get settled before the class starts. Access to the pool is granted during the summer months when our spring-water pool is open.
Important: Sound Baths are not advisable to attend if you are pregnant, fitted with a pace-maker, have epilepsy or become triggered by sounds.

French Canapés
Learn to make the very best French canapés - perfect for stylish dinner parties. Recipes change with the seasons... think cheesy gougères; beignets with aioli; vol-au-vents, or stuffed vegetable fritters. After the class, enjoy your canapés with an apéritif in the Baa Bar or Olive Garden - a taste of France in the heart of Thyme.
This class runs from 3-4.30pm. We kindly ask guests to arrive 10 minutes before.
