Shiso: The Ingredient Edit

Shiso (Perilla frutescens) is a soft, serrated leaf known for its gentle notes of mint and basil, its distinctive flavour is bright, slightly spicy and subtly citrusy.

Traditionally used in Japanese cooking, shiso was relatively unknown in England until the late 20th century. However, as interest in global herbs and heritage varieties grew, it quickly became a favourite among cooks and growers alike.

We grow shiso in our polytunnels, where it can remain sheltered and warm. It pairs beautifully with wild plums and is a fresh, fragrant and rather exotic addition to our cocktails, salads and pickles this summer.

Our shiso leaves are muddled with plum-infused vodka and topped with soda to make our ‘Plum & Perilla’ cocktail, available to enjoy in the Ox Barn.
