Oliver Rowe's Cherries poached in Pernod

FOOD FOR ALL SEASONS BY OLIVER ROWE

When Marj Lang reviewed Oliver Rowe's 'Food for all Seasons' for our June Edition of 'Thoughts from Thyme' the recipe she chose to try was ‘Cherries Poached in Pernod.’ Perfectly seasonal and utterly delicious, a perfect example of the simplicity of Oliver's cooking. We loved the Thyme's Table dinner he cooked for our guests at the beginning of July and are looking forward to further guest appearances from this inspirational chef, writer & food stylist.

Marj wrote, "I love cherries … and I love Pernod!   Although truth be told, I hadn't tried them together before.  It turned out to be the perfect pairing, and I used it as the base for a floppy, soft trifle!! Cream, custard, nuts … the works."

We are very grateful to Faber & Faber for providing the extract of Oliver's Recipe below
