Ingredient Edit: Quince

Quince is a fragrant autumnal treat. With its misty cadmium yellow hue and voluptuous form it is known as the golden apple. A member of the rose family and a sacred symbol of Aphrodite, it is delicious poached with honey, rose hips and wine.

Pickled and preserved, it’s aromatic, sharp and astringent flavour makes it a joyous accompaniment to cheese, charcuterie and game and we mustn’t forget our quince and whisky sour to warm the heart and lead us astray on a cold November afternoon. 

Grown in abundance on our orchard trees, quince is our ingredient of the month. You will find quince throughout our menus - pickled on crostinis, distilled for martinis, and in a pudding or two.
