Scented Rhubarb Cordial

The star of the our summer cocktail and cordial classes is Thyme's scented rhubarb cordial, delicious as a soft drink or with a shot of gin or vodka, topped with English sparkling wine & soda water - a perfect summer spritz, made gloriously celebratory with a garnish of edible flowers.

Ingredients

450g rhubarb
10 elderflower heads
1 un-waxed lemon, sliced 450ml water
450 g caster sugar
1 tsp citric acid

Method 

1. Heat the oven to 180°C

2. Top & tail the rhubarb. Wash thoroughly and cut into 1cm thick slices.
3. Place the rhubarb in a ceramic dish, add the water and sugar. Stir to help dissolve.
4. Add the lemon and the citric acid.
5. Cover with foil and place in the oven for approx. 45 minutes until the rhubarb is lovely and soft. Set aside and allow to cool. Then add the elderflowers & leave for 24 hours to steep. 
6. Meanwhile, sterilize your bottles in a 110°C oven for 20-30 minutes.
7. Strain through muslin or a fine sieve before bottling and sealing. Store in a dark, cool place and refrigerate after opening. It should keep for 2-3 months.
