Caryn Hibbert

Caryn Hibbert began her career in medicine, training as an obstetrician and gynaecologist. In 2002, seeking a slower pace of life and space to raise her family, she moved to Southrop Manor in the Cotswolds. There, alongside her father, she began restoring a collection of derelict farm buildings, an endeavour that quietly sowed the seeds of Thyme. Drawing on her love of design, gardening, food and people, Caryn shaped Thyme into a living, breathing expression of seasonal living.

In 2018, she and her daughter Milly launched Bertioli by Thyme, a botanical brand born from their shared vision to bring the wild inside, and to extend Thyme’s ethos beyond its walls.

Today, Caryn continues to guide the creative direction of both Thyme and Bertioli with curiosity, care and a belief in the quiet power of things done slowly, and well.

Charlie Hibbert

Charlie Hibbert was brought up in a family of hosts and entertainers. Ingrained from early childhood, he learned the importance of using food to shape an atmosphere and mood, and the kitchen soon became his favourite place to be. He started working in the Swan at Southrop when he was 13-years-old as a kitchen porter.

After training at Ballymaloe under Darina Allen and refining his skills with Jeremy Lee MBE at Quo Vadis. His mother, Caryn Hibbert, founded Thyme in 2007 and in 2018, Charlie returned to Southrop to open the Ox Barn. He later took over the kitchen operations of the Swan and his recipes have since been featured in publications including The Sunday Times, The Telegraph, and House & Garden.

Now Charlie is focused on making both restaurants into a true reflection of his upbringing, training, and vision as Chef Director. Refining their identity, deepening their connection to the land, and creating a dining experience rooted in warmth, seasonality, and care.

Camilla Hibbert

Camilla (Milly) Hibbert grew up watching her mother build Thyme from the ground up, instilling in her a deep understanding of hospitality and storytelling. She went on to pursue a career in design, visual merchandising, and experiential marketing, working both agency and in-house across London, Liverpool, and New York.

In 2018, she returned home to launch retail at Thyme and founded Bertioli by Thyme, later taking on brand development and marketing for both brands. Now, as General Manager, Milly oversees the day-to-day operations of the estate; bringing together its many elements, from hospitality and retail to food and garden, ensuring every detail aligns with the Thyme experience. All of this while leading the business into its next chapter.
