Thyme is a family story.

CARYN HIBBERT

Caryn Hibbert grew up in the countryside with her mother and father, Patricia and Michael Bertioli, developing a love of nature, food, art and science in equal measure.

A doctor by trade, Caryn combined motherhood with her medical career before moving to the Cotswolds where the children grew up immersed in country life, the restoration of the farm buildings and the creation of Thyme.

CHARLIE HIBBERT

Charlie Hibbert was brought up in a family of hosts and entertainers. Ingrained from early childhood, he learned the importance of using food to shape an atmosphere and mood, and the kitchen soon became his favourite place to be.

Charlie went on to train at Ballymaloe under Darina Allen and perfected his craft under the watchful eye of renowned chef Jeremy Lee at Quo Vadis in London.

Camilla HIBBERT

Through a vibrant career in design, visual merchandising and marketing, Milly has worked both in-house and agency side for businesses in London, Liverpool and New York. Her focus was often on experiential activations, event management and community or client liaisons, allowing a passion for working with people and brands to thrive.

In 2018, she returned home to work alongside Caryn to launch retail at Thyme and founded Bertioli by Thyme, before taking on brand development and marketing for both brands.

Now, Milly has taken the reigns at Thyme as General Manager, leading the daily operations of delivering the Thyme experience and building the business.
