THE ONE FOR THE MORNING
What an exciting start to Christmas Day, our ‘Three Wise Men’ cocktail … unusual, refreshing and not too sweet.
It’s a lovely treat while family gather around the tree to open gifts or as the kitchen is warming up with the first smells of culinary delights to come. Our collection of festive cocktails all feature delicious spirits from our friends at Chase Distillery, and here we are using the distinct flavours of Chase’s Williams GB Dry Gin, with clear notes of cinnamon, nutmeg and ginger … our first ’wise man’. Add to this the indulgence of two further ‘wise men’ in the form of a good Campari, and the more unusual Italicus, lightly citrus, a little bitter, with hints of rose and lavender ... it is truly indulgent. Finishing the cocktail with two drops of rose water creates a warm floral note, reminiscent of turkish delight. At Thyme we love floral flavours at all times of year, making rose syrups and infusing alcohols with petals throughout the summer. A rose for the garden makes a perfect Christmas gift for the gardener or the cook in your life. Remember, it is really important when cooking with flowers to ensure that they have not been sprayed; red or pink blooms are best; varieties such as Darcey Bussell, or Princess Alexandra of Kent, that have a fruity flavour. We planted Munstead Wood roses in the farmhouse gardens at Thyme and their fragrant blooms have become a firm favourite with our chefs.
- 20 ml Chase Extra Dry Gin
- 20 ml Campari
- 20 ml Italicus Rosolio di Bergamotto
- 10 ml fresh lemon juice
- 50 ml Nyetimber English sparkling wine to top up
- 2 drops rose water
- 1 tsp pomegranate seeds
- Stir the first four ingredients in a mixing glass.
- Strain into a champagne flute or coupe.
- Top up with sparkling wine.
- Gently drop the pomegranate seeds into the glass (some will float and some will sink).
- Finally, add the two drops of rose water.
