Our Valentine's Pom Collins

This ruby red twist on a Tom Collins, the classic gin sour, is perfect for our Valentine's guests and with the pomegranate season producing its very juiciest fruits at this time of year, it is the most delicious flavour to use. Pomegranate syrup, or molasses, is widely available in quality grocers and supermarkets; but it is equally easy to make, simply reducing pomegranate juice with sugar and lemon to a deep syrupy consistency.

  1. Pour the gin, lime juice, and pomegranate syrup in a straight-sided glass over ice cubes.
  2. Stir thoroughly.
  3. Top with club soda.
  4. Garnish with the pomegranate seeds and sprigs of lavender.
