Spicy Okra from Rambagh Palace

Okra or Ladies Fingers are coated with a tangy masala, deep fried very quickly to keep their flavour and add crispness. This is perfect as a starter, tapas or as a side with the Fiery Lamb dish.



  1. Trim the okra and cut in half lengthways
  2. Put the okra in a large mixing bowl and sprinkle with all the dry ingredients to coat
  3. Season with salt, add a tablespoon of water
  4. Deep fry at 110°c
  5. Serve immediately with a wedge of lime
