Thyme

A Seedlip Bramble

by Thyme Recipes 22 Nov 16

This was the perfect start to our Seedlip Thyme's Table dinner and is a really delicious solution to 'what to drink when you are not drinking' - especially during the festive season.

Ingredients:

Method:

  1. Put all ingredients into a Boston glass & shaker
  2. Give it a good shake
  3. Strain into your glass over fresh ice
  4. Garnish with a lemon twist

To make your Damson Shrub, take quartered damsons (thawed from frozen is best) and line the bottom of a container, cover with an equal amount of sugar so there are no gaps or fruit showing.  Leave for two days to ferment, crack through the sugar crust and put the pulpy fruit into a muslin to drain overnight.  Pour your syrupy liquid into a measuring jug and add half the volume in cider vinegar. Store in a sterilised kilner jar and refrigerate.
