Corn Fritters with Chilli Jam

Last week's 'Instinctive Cook' class started in the kitchen gardens at Thyme, eager cooks filling baskets with corn and, more unusually, fresh green coriander seeds.  In tune with our philosophy of instinctive seasonal cookery Marj Lang had nibbled at some seeds and to her surprise the burst of flavour demanded they be used.  What more perfect pairing than corn & coriander, so these light little seasonal fritters, so easy to make for breakfast through to supper, were given an extra lift by the addition of these delicious seeds.  Our corn is a little late this year, but very, very sweet so the chilli jam is an ideal accompaniment - and again so simple to make.


Makes aprox. 8 fritters

Fritter Ingredients:

Fritter Method:

  1. In a separate bowl, combine eggs and a splash of milk.  Gradually add the egg mixture to the dry ingredients and whisk until you have a smooth, lump free batter.  The batter will be quite stiff.
  2. Sift flour, baking powder and salt in to a large bowl and make a well in the centre.Place corn, spring onions and herbs in a mixing bowl and add just enough batter to lightly bind them, (about ¾ cup).
  3. Heat 2 tablespoons of vegetable oil in a non-stick frying pan on medium heat, then drop in 1 tablespoon of batter per fritter and cook.
  4. Cook for 2 minutes, or until the underside of each fritter is golden.  Turn over and cook fritters on the other side. 
  5. Transfer to a plate and keep warm while cooking the remaining fritters. 


Chilli Jam Ingredients:

Chilli Jam Method:

  1. Whiz the first 8 ingredients to a paste.
  2. Put the sugar and the water in a pan. Stir over the heat until dissolved. Bring to the boil without stirring until a caramel forms.
  3. Add the paste and the remaining ingredients and simmer until it reaches a jam like consistency.
  4. Seal in sterilised jars.

Perfect for breakfast, brunch, lunch or supper, simply serve your fritters with a generous dollop of chilli jam and another of crème fraiche or Greek yoghurt - delicious!
