The kitchens at Thyme are a hive of industry at this time of year, as the soft fruits in the kitchen ripen and our chefs turn their thoughts to preserving. In August the quantities of soft fruit being harvested start to outweigh the appetite of even the most ardent fan of a fresh fruit dessert, so we thought we would share one of our chef's very favourite jams. This particular recipe has a decadently adult twist using a truly delicious blackcurrant liqueur from Gibson's Organic Liqueurs, its deep flavour, redolent of the summer and the English countryside in which it grows - a wickedly perfect jam.
