Matthew Wardman is Head Chef of our award winning restaurant at The Swan, and now chef-tutor in The Cookery School at Thyme. He has previously worked as a senior chef de partie at the RAC Club in London and as senior sous chef at the Russell’s of Broadway restaurant in Worcestershire. As Head Chef at the acclaimed Inn at Fossebridge, Matt was able to build on his conviction to 'no waste' and 'back to the land' philosophies.
Joining the team at Thyme in 2013, the principles of sustainability, the farm and kitchen garden on our doorstep and our commitment to supporting local producers were a perfect fit. A countryman at heart, he spends as much time on the farm as in the kitchen, discussing produce with the garden team (not so surprising as wife-to-be Tess is one of our gardeners!). The champion of nostalgic, honest flavours, he brings a thoughtfulness to The Cookery School that is both informative and exciting.
