Matthew Wardman is Head Chef of our award winning restaurant at The Swan. He has previously worked as a senior chef de partie at the RAC Club in London and as senior sous chef at the Russells of Broadway restaurant in Worcestershire. As Head Chef at the acclaimed Inn at Fossebridge, Matt was able to build on his conviction to 'no waste' and 'back to the land' philosophies.
Joining the team at Thyme in 2013, the principles of sustainability, the farm and kitchen garden on our doorstep and our commitment to supporting local producers were a perfect fit. A countryman at heart, he spends as much time on the farm as in the kitchen, discussing produce with the garden team. The champion of nostalgic, honest flavours, he brings a thoughtfulness to our menus that shines from the plate.
